The Story of Khichdi

In ancient India, there lived a wise and just king named Dasharatha. He ruled over the kingdom of Ayodhya with kindness and fairness.

One day, a severe famine struck the land, and the people of Ayodhya were struggling to find food. The king's advisors suggested that he impose heavy taxes on the people to collect grain for the royal storehouse.

However, the king was not convinced. He knew that his people were already suffering, and imposing taxes would only add to their misery.

As the king sat in his court, pondering over the problem, a wise old sage named Vasishtha appeared before him. The sage asked the king to share his concerns, and the king explained the situation.

Vasishtha smiled and said, "I shall teach you a recipe that will feed your entire kingdom, and it will be made from the simplest of ingredients."

The sage then taught the king how to make Khichdi, a dish made from a mixture of rice, lentils, and vegetables. The king was skeptical at first, but he decided to give it a try.

The king ordered his cooks to prepare a massive quantity of Khichdi, using all the available ingredients. The aroma of the cooking Khichdi wafted through the streets of Ayodhya, and people from all over the kingdom gathered to taste the dish.

To everyone's surprise, the Khichdi was not only delicious but also incredibly filling. The people of Ayodhya ate to their heart's content, and there was still plenty of food left over.

From that day on, Khichdi became a staple dish in the kingdom of Ayodhya. It was served at every meal, and it brought people together. The king's advisors were amazed at how a simple dish like Khichdi could solve the problem of hunger in the kingdom.

And so, the story of Khichdi spread throughout India, and it remains a beloved dish to this day, symbolizing the power of simplicity, community, and the wisdom of the ancient sages.

Saturday is our Veg Day so and throughout the day I become so busy , so that Day is our mostly Ayodhya special day ! Maximum time Short cut recipe ! But this time I have done in Rice Cooker . In this I felt comfortable for one pot meal Basically because my kitchen remains neat & clean . And moreover , nutritious values remains intact as most of the Cooking can be done with lid .

Mixed Vegetable Khichdi Recipe

Serves : 4-6 people

Ingredients:

2 cups rice

2 cups yellow dal (split moong dal)

2 cups water

2 medium broccoli florets

1 medium carrot, peeled and chopped1/2 cup French beans, chopped

 1 medium tomato, chopped

1 tsp cumin seeds

2 bay leaves

2 red chillies

A pinch of asafoetida

 2 tbsp mustard oil

Salt, to taste

Homemade spices powder (e.g., garam masala, cumin powder, coriander powder), to taste


Instructions:

1. Rinse the rice and dal together, and soak them in water for 30 minutes. Drain the water and set aside.

2. Heat 1 tablespoon of mustard oil in a large pressure cooker over medium heat.

3. Add cumin seeds, bay leaves, and red chillies. Let them sizzle for a few seconds.

4. Add broccoli, carrots, French beans, and tomato. Cook for 5-7 minutes, or until the vegetables are slightly tender.

5. Add the soaked rice and dal mixture, salt, asafoetida, and homemade spices powder. Mix well.

6. Add 2 cups of water and stir.

7. Close the lid of the pressure cooker and cook for 3-4 whistles, or until the rice and dal are cooked and mushy.

8. Let the pressure release naturally. Open the lid and fluff the khichdi with a fork.

9. Serve hot, garnished with fresh coriander leaves or a dollop of ghee, if desired.


Tips and Variations:

- Use any combination of vegetables you like or have on hand.

- Adjust the amount of spices and chillies to suit your taste.

- Add a splash of lemon juice or a sprinkle of chopped fresh herbs for extra flavor.

- Serve with a side of raita (yogurt and cucumber sauce), papadum, or pickles for a complete meal.
