Methi Spinach Rice 

Of all the green leafy vegetables available in India , fenugreek or Methi is perhaps the mist distinctively flavoured . While it was many culinary uses , this herb- plant is also a very effective natural remedy for many ailments , and has long been used in myriad home remedies. 

Dried fenugreek leaves , known as kasuri Methi,  are used as a flavouring agent in numerous North Indian dishes . 


Health Benefits : 

  • Fenugreek leaves are good source of iron , calcium , beta carotene and vitamin C.  
  • Methi helps control diabetes by stabilizing blood sugar levels . 
Brown rice improves the fibre content of this green Rice made with stomach-friendly Ingredients like fenugreek and onions, which helps to curb acidity .

Preparation Time: 10 minutes 
Cooking Time: 10 minutes 
Serves

Ingredients : 

  • 2 cups chopped fenugreek leaves 
  • 1 Cup Chopped Spinach 
  • 3 cups soaked and cooked brown rice with added salt
  • 2 tsp oil 
  • 1/4 cup thinly sliced onions 
  • 1 and 1/2 tsp ginger- Green chilli paste 
  • Salt to taste 

Preparation Method : 

  1. Heat the oil in a broad non-stick pan , add the onions and saute on a medium flames for 1 to 2 minutes. 
  2. Add the ginger- green chilli paste & saute on a medium flame for 30 seconds .
  3. Add the fenugreek leaves and Spinach , saute on a medium flame for 1 or 2 minutes .
  4. Add the brown rice and salt and gently , cook on a medium flame for 1 or 2 minutes , stirring occasionally. 
  5. Serve hot .
