Awadhi Paneer Masala | Lucknow Paneer Masala

Whenever I am thinking for some special cuisine at my home, it has to be really a special dish for me. No any common dishes I would not prefer to follow absolutely. So Some state or region has its own culture for their cuisines. So we identify them only by their special and identical cooking preparation which are really well known by all of us.As for example For Mughlai khana we always know that Biriyani is the most favorable delicacy. Same to same Awadhi cuisine or Lucknow cuisine has their own specialty too. In maximum cases they are cooking in Dum Puckt style foods means cooking will be done in a big hundi with a lid including all the spices but in low flame. But think as Mughal culture and Lucknow culture are more or less same in their cooking style. Still it has to be some differentiation in some cases. Hope you got to know that why I had given so many lectures about the Awadhi Cooking. Because today I want share one Awadhi special recipe. It's a simple and easy cooking recipe but a really different one in taste. Something Royal Gharana special. A paneer Recipe which I come to know from my Neighbor. Thanks to them. You can try this lovely recipe at your home too.Hope you will love it definitely.







Ingredients :

Marinate Paneer

Fresh Paneer  Cubes 4 cups
1tsp ginger paste
1 tsp garlic paste
4 tbsp Yogurt

Other Spices 
Bay leaf 1
Cinnamon 1 inch
Cloves 4
Green Cardamom 2
Poppy Seeds 1 tbsp
Sesame Seeds 2 tbsp
Garlic paste 1 tsp
Black peppercorn 5-6
Big size Onion sliced
Tomato sliced 1 cup
Capsicum Sliced 1/2 cup
Coriander Powder 2 tbsp
Oil 4 tbsp
Salt to taste
Turmeric powder 1 tsp
Chili powder 1 tsp
Coriander leaves finely chopped 1 cup

Method :

Soak Paneer in warm water with little salt.
Marinate paneer with marinate spices for 1/2 an hour.

Heat 3 tbsp oil a pan.
Add Cinnamon stick,Cloves,Green cardamom.
Next add Sesame seeds and poppy seeds.
Add sliced onion and garlic paste, Fry for 3-4 mins.
Add little salt,turmeric powder and chili powder.
Add black peppercorn,Tomato sliced and coriander powder,fry until oil comes out.

Now grind the spices into the mixture grinder.Make a thick paste.

Again heat rest of the oil in a pan.
Add bay leaf .
Add marinated paneer fry for some times.
Next add the paste and little warm water to prepare little gravy type.
Adjust seasoning.
Add Capsicum slice to it.
Cook for sometimes with lid.
Garnish with coriander leaves.
Now A Royal Gharana Panner Masala is ready to Serve.
Serve with Chapati, Paratha or Jeera rice.
