Spinach Curry | In Bengal Style

Today sharing a Bengal touch Spinach curry. This spinach curry is very common in any Bengali house. In everyday menu its very healthy and tasty vegetables combination with plain rice.Its very simple to prepare also. I got this recipe from My Mom. Thank You Mom. I only like to prepare it in authentic way. In this spinach curry one kind of urad dal vada which is said "Bori" in Bengali, and a special whole spice * "Paanch-Foron" bring more flavor in this dish. So a nutritious healthy vegetables curry from bengal kitchen is serving for you. Now check this healthy and easy recipe.

*Paanch-Foron consists of five spices. Radhuni (another bengal spice) is the better substitutes of Mustard seeds.





Ingredients :

Spinach Bunch 2 .
Potato cut in medium cube size 2 cups.
Eggplant cut into small size 2 cups.
Pumpkin cut into medium size cups.
Green chili chopped 2 tbsp.
Green Peas 1 cup.
Coriander leaves chopped 1/2 cup.
Bori or Urad dal Vada small size.
Panch-Foron  2 tbsp (Cumin seeds,Onion Seeds,Fennel Seeds,Fenugreek Seeds,Radhuni or Mustard Seeds)
Cumin Powder 1 tsp.
Turmeric Powder 2 tsp.
Salt to taste.
Sugar to taste.

Method :

Cut Spinach Leaves of your choice.
Fry Bori/Vada until red. crumble it. set aside.
Heat oil in a pan.
Add Paanch-Foron,when it starts to splutter.
Add potatoes and fry for sometimes.
Add Pumpkin and Eggplant too. Saute a little
Add salt to taste.
Add turmeric powder.
Add spinach leaves and mix well.
Add green peas.
Cover with a lid and cook for sometimes.
Add cumin powder.
Add sugar to taste.
Sprinkle chopped coriander leaves.
Add crumbled bori/vada and mix well.
Now a healthy spinach curry is ready to serve with Steamed or Plain rice.

Note : You can add more vegetables like Carrot, Bean,Sweet Potato,Raw Papaya to make it more healthy.
