Friends today I want to share one pure vegetarian recipe. A Dum Aaloo or Dum Potato Recipe. Origin wise me actually a non -Vegetarian but within a week for 4 days I only take vegetarian foods that means no chicken,meat,egg even onion and garlic too. So this is the recipe in same way where I did not use any onion and garlic. So this is the preparation of Pure veg you can say .
This preparation is very easy and tasty too. Little spicy gravy goes very nice with any kind of Paratha or Chapathi. It gives little tangy flavour also.
It goes very well with Bengali style Luchi even . In Bengal there was a myth that Sunday breakfast means luchi only ....... still there is some families who keep on maintaining this tradition ..... for them this is a must try preparation ......

Ingredients :
Small Size Potatoes 10-12 (peeled and boiled).
Ginger paste 2 tsp.
Green chilly paste 1 tsp.
Tomato chopped 1/2 cup.
Bay leaf 2.
Aamchur powder(Dry Mango) 1tsp.
Sugar 1 pinch.
Salt to taste.
Asafoetida 1 pinch.
Turmeric powder 1 tsp.
Kashmiri chili powder 1 tsp.
Mustard Oil 3tbsp.
Coriander Leaves Chopped.
Cumin seeds 1 tsp.
Roasted and Grind :
Coriander powder 2 tbsp
Cumin powder 1tbsp
Cinnamon stick 2
Cardamom 3
Cloves 2
Method :
Marinate potato with little salt,turmeric powder and kashmiri chili powder,
Heat oil in a pan.
Add bay leaf and cumin seeds.
When cumin seeds changes color add asafoeatida to it.
Add ginger paste and saute for sometimes.
Add chopped tomato,green chili paste and saute 2-3 mins.
Add sugar to it.
Add turmeric powder and chili powder.
Add grind spices and fry for sometimes.
Add salt to taste.
Add 1 cup warm water and cook.
Finally add chopped coriander leaves and serve with Luchi, Paratha, etc.
