Phirni | Firni | An Indo-Pakistani Dessert

Friends it is really a long break that I am posting another dessert recipe. This time sharing something different for you. A dessert which is very famous in Muslim community like India,Bangladesh,Pakistan,Iran or Afghanistan. This is the recipe which they all are ready to serve for their Wedding ceremony and on Various festivals like Eid-Ul-Fitr and Eid-Ul-Adha . A typical formula to make kheer with little variant.Tradition wise Firni is served chilled in Earthenware or Clay pots. But Dears I am really fan of this Firni rather than our Payesh or Kheer. And I have no doubt that you will love too.

I got this recipe from my Sister. Her Mother-in-Law is just used to prepare it as she belongs to Muslim Family. So in that case It is very true that it is an authentic Firni or Phirni Recipe. Some people add little green cardamom,pista and many more nuts and essence to make it more rich. But in my sister's in-laws house, they prepare it with just a few ingredients instead they are using nice quality scented rice means a specific rice called Gulab rice one kind of Basmati Rice , which is little scented like Rose. But option is there you can use Flavored Basmati Rice or Samba Rice (Govind Bhog rice) too. Then you can add little Rose water or Dried rose petals or Rose essence whatever you want. It is your Choice! Me too using Good quality Flavored Basmati Rice.

Phirni | Firni | An Indo-Pakistani Dessert

Prep time: 2 hours
Cook time: 30 mins.

Ingredients
  • 1 Cup Flavored Basmati Rice
  • 1 Cups Sugar
  • 1 ltr. Milk
  • 4-5 strands Saffron
  • 1 tsp Rose water
  • 1 Cup Milk maid
Cooking Directions
  1. Wash Rice for 2-3 times.
  2. Spread over the cloth to dry it completely.
  3. Grind it into fine rice flour.
  4. Now boil milk and make it cool.
  5. Next put boiled milk onto gas stove and add rice flour to it.
  6. Stir continuously.
  7. Add sugar and milk maid gradually.
  8. Stir continuously.
  9. When the mixture become little thicken that means it is done.
  10. Add saffron strands and rose water.Mix well.
  11. Pour into serving bowl(earthenware is preferable)
  12. Now let it be cool completely.
  13. Refrigerate it for 3-4 hours.
  14. Serve chill.
Note : You can serve along with pistachio also.
