Mixed Vegetables Curry

Today sharing one delicious mixed vegetable curry. Its really a tasty and healthy curry which goes very well with roti or rice . Something different in taste and looks. It is a dry vegetables curry. As there is using very little spices at all so its healthy too. I used carrot,beans,potato,gobi,broad beans ,green peas,brinjal,pumpkin,gobi sticks or drumstick . But you can add more vegetables as per your choice. But you should use grated coconut for must. Its an easy and quick recipe also. And trust me you will like it definitely. Mixed Vegetables Curry

Cook time: 15 mins

Ingredients
  • 1 Cup Carrots (Cut into small cubes)
  • 3/4 Cup Beans (Cut into small cubes)
  • 1 Cup Mushrooms (Cut into small pcs)
  • 1 Cup Potato Cubes small size
  • 2 Green chili (Finely chopped)
  • 1 Tomato chopped small cubes
  • 1/2 tsp Turmeric powder
  • 2 tbsp Oil
  • 2 tbsp Poppy seeds paste
  • 1 tsp Ginger paste
  • 1 tsp Garlic paste
  • 4 Cloves
  • 2 inch Cinnamon sticks
  • 1 tsp Fennel Seeds
  • 1/2 Cup Yogurt
  • 2 tsp Garam Masala
  • Salt to taste
  • 1/2 Cup Coconut grated
  • 1/2 Cup Coriander leaves finely chopped
Cooking Directions
  1. Heat oil in a pan .
  2. Add Cloves,Cinnamon sticks,Fennel seeds. saute till fragrant .
  3. Add ginger garlic paste and saute a little.
  4. Add all cleaned vegetables except coconut and tomato and fry for 3-4 mins.
  5. Add green chili.
  6. Add turmeric powder and salt to taste.
  7. Add poppy seeds paste and grated coconut and mix well.
  8. Add yogurt and mix well.
  9. Sprinkle little water and cover until vegetables done.
  10. Add garam masala.
  11. Sprinkle coriander leaves and serve with roti or rice.
