Rajasthan is the taste of place where a variety of vegetarian recipes blows in the air...
I can smell it...A delicious taste of masala and vegetables...I love to travel this place also.As their culture they are rich with there taste also...
So,it is a little effort from me that I want to share a Rajasthani Thali with you...

Menu :
Bedmi Puri (Indian Bread)
Gatte Ki sabzi (Gram Flour \Curry)
Lasun Ki chutney (Garlic Pickle)
Rajasthani Vindi (Rajasthani Lady fingers)
Rajasthani Pulao(Sweet dish)
Raita (Curd Rasam)
Bedmi Puri :
Ingredients :
- 500 gm Moida
- 100 gm Moong daal
- 1 tbsp Red chilli powder
- 1 tbsp ground coriender
- 1 tbsp garam masala (sahi)
- 4 tbsp oil for dough
- Oil to deep fry
- Salt to taste
* Soak moong daal over night/a full day
Method :
- Mix moong daal,red chilli powder,ground coriender,garam masala & Grind it.
- Make a paste of grinded mixture.
- Add oil and paste in moida.
- Add water and make dough out of it.
- Make small balls out of the dough and roll out it to make puris.
- Deep fry it till the blow up.
Bedmi puri is ready to serve.
Gatte Ki Sabzi :
Ingredients :
- 400 gm besan
- 2 tsp coriender powder
- 4 tsp ghee
- 300 gm curd
- 1 tsp red chilli powder
- 1 pinch haldi
- 1 tsp cumin seeds
- 4 tsp oil(badam/white)
- salt to taste
Method :
- Add red chilli powder,salt,coriender powder and ghee to besan.
- Mix it well.
- Prepare stiff dough.
- Make thin strips of the dough.
- Boil them in water till they are floating.
- Now cut them into pcs.
- Add red chilli powder,salt,coriender powder and haldi to the strained curd.
- Mix it well.
- Heat the oil.
- Put cumin seeds and curd mixture.
- Cook till it comes to boil.
- Now add cooked besan pcs.
- Cook it medium flame for 5 mins.
Gatte ki sabzi is ready to serve.
Lasun Ki Chatni :
Ingredients :
- 15 cloves of garlic.
- Dried coconut (Grated) 1/2 cup.
- 3-4 red chillies,broken into 4-5 pcs.
- 1 tbsp seesame seeds/till/peanuts.
- ball of tamarind ,the size of walnut
Method :
Roast all these ingredients in a kadai one by one to ensure even browning.Put in a blender and process for a short while till it makes a coarse paste.
Lasun ki chatni is ready to serve.
Rajasthani Vindi :
Ingredients :
- 250 gm ladyfingers.
- 3 tbsp bengal gram flour
- 1/2tsp onion seeds(kalo jeera)
- 1/2 tsp red chilli powder
- 1 tsp cumin powder
- 1 tsp coriender powder
- 1-1/2 fennel seeds
- 1 tsp dry mango powder
- 4 green chillies
- 1/2 tsp turmeric powder
- 1/4 tsp cumin seeds
- 1 tsp garam masala powder
- Salt to taste
Method :
- Rinse and wipe ladyfingers.
- Snip off the 2 sides and cut on one side.
- Combine bengal gram flour,1 tsp fennel seeds and all other dry masala except cumin and onion seeds in a bowl and mix well.
- Add salt and 1 tsp oil to it.
- Fill this masala into the ladyfingers and set aside.
- Heat up 3tbsp oil and fry rest of the fennel seeds,cumin seeds,green chillies and onion seeds for a while.
- Add stuffed ladyfingers to it and stir fry for 5 mins.
- Cover and Uncover to stir and fry till they are not crunched.
Rajasthani vindi is ready to serve.
Rajasthani Pulao :
Ingredients :
- 2 cups Basmati rice
- 1 cup sugar
- 1 cup ghee
- 20 almonds,blunched and chopped
- 20m Pista chopped
- 1 tsp cardamom powder (elaaichi powder)
- 1/2 tsp saffron soaked in 1 tsp milk
- 4 cups milk
Method :
- soak rice in water for 2hrs.
- Heat ghee and add the drained rice,add milk to it.
- Cover and cook on a low flame ,stirring ocassionally but gently,so that the rice grains do not break.
- As soonas the rice is cooked,add cardamom powder,dry fruits,sugar and saffron.
- Mix well.
- Bake in a moderately hot oven,till each grain is seperated.
- Serve hot as sweet dish.
Raita :
Ingredients :
- Curd 2 cups
- Cucumber (Chopped) 1 small size
- Onions(chopped) 1 medium size
- Green Chilli 3-4 (finely chopped)
- Tomatoes 1(chopped)
- Roasted cumin powder 1tsp
- Black pepper powder 1tsp
- Red chilli powder 1 tsp
- salt to taste
- Coriender leaves (Finely chopped)
- Water 4 cups
Method :
- Mix all the ingredients one by one in a bowl.Mix well and keep freez.
Serve chill.
Now You can flavour the taste of Rajasthani Thali.
