Dear all, Today I am going to Share with you Eggplant Masala better to call it Bengan Bharta .This is some kind of easiest Subji which I made usually.But I must say you that its so tasty that once you made then you will have to make it very often.
In Bengali Eggplant is called "BEGUN".If you split, it is like BE-GUN which means "No Value" or "NO Quality" at all.In simple words eggplants have no Nutrition value. I am not sure about this too.Because Nowadays Nutritionist are saying that Eggplant has full of Anti-oxident Properties which help you to protect from the Cell Damage.So May be This is actually a Myth That Eggplant has no Nutrition Value.But obviously Nutrition value will depends on that how You are cooking this one!!! If you cook it spicy then it has less value otherwise its good for your heath.
But its true we like to cook and eat.So somedays it will be spicy and some days its healthy.So what matters? Cook and Eat as you wish :) There are so many recipes we have to make with eggplant in Bengal.I will share with you definitely once. But this is just a bharta of Bengan .Little spicy also.Usually I made it with Mustard oil.And You know,any spicy menus like non-veg items goes to extreme fit with the Mustard oil.Anyways this Bengan Bharta is so simple but goes very well with warm Rice as well as Roti also.

Ingredients
Eggplant/Brinjal 1 big size Burnt after applying little oil.
Tomato finely chopped 2
Mustard Oil 4tbsp.
Cumin seeds 1tsp.
Onion Paste 2tbsp.
Garlic Paste 1tbsp.
Ginger Paste 1tbsp.
Green chilly 2 chopped.
Dry Red chilly 1
Coriander Powder 2tsp.
Cumin Powder 1tsp.
Garam Masala Powder 1tsp(Green cardamom 2, Cinnamon 2 inch, Cloves 3-4.Grind it in Mixer). ( Optional)
Turmeric Powder 1tsp.
Salt to taste.
Lemon Juice 1 tbsp.
Coriander Leaves chopped .
Method :
Peel off after burning the eggplant/brinjal and smash well in a bowl.
Heat Mustard Oil into pan.
Add cumin seeds & dry red chilli.When it starts to splutt.
Add Onion , Garlic , Ginger Paste. Stir for a while.
Add Turmeric Powder,Chilli Powder.Then Fry.
Add Green Chilli,Coriander and Cumin Powder to it.
Add Tomato. Saute for a while .
Add Eggplant. Mix well & stir for some times.
Add Salt to taste.
Add Garam masala
Add coriander leaves & lemon juice ,mix it up and cover for five minutes.
Serve It with warm Rice Or Roti.
