Ingredients
- 1 Cup Bamati Rice (washed and soaked)
- 3/4 cup Paneer Cubes
- 1/2 Cup Green Beans (blanched)
- 1/2 Cup Carrots (blanched)
- 1/2 Cup Broccoli (blanched)
- 1 tsp Ginger Grated
- 4 tbsp Ghee/Clarified Butter
- 1/4 Cup Capsicum (red , green , yellow )
- 2 cinnamon sticks 1"
- 5-6 peppercorns ( little crushed)
- 4 cardamoms (little crushed)
- 1 tsp Fennel seeds
- 4 cloves
- 2 tbsp Cashews nuts broken
- 1 tbsp Raisins
- Biryani Spices
- Kesariya soaked in 2 tbsp milk
- Biryani Scent , ator
- Salt and Sweet to taste
- Soak washed rice for 1/2 an hour.
- Heat 3 tbsp ghee in a kadhai.
- Add all whole and crushed spices .
- Add ginger and all veggies & paneer,saute a little
- Add Add rice and 2 cups water to it.
- Adjust seasoning
- Cover with a lid , make a little gap to way out excess steam
- When done sprinkle 1 tbsp ghee .
- Sprinkle Ator edible fragrance , Kesari Milk
- Sprinkle Biryani spices
- Cover with lid
- Put on dum for 10 minutes
- Serve hot with Raita or any light gravy and salads.
