Sahi Pulav / Sahi Fried Rice

This is one of special Sahi menu of Badsahi Time Periods. In quality its a very Rich and Taste wise its you have to say Aaha La Jawab...!!! Slight sweet in taste too.Really a spellbound item.All ingredients which are using to make this preparation,also the Rich and Costly. In Our culture it is making for the very special reason at all. By those days these ingredients were very rare to have. It is very difficult to find in the regular market. That's why it was reserved for the Sahi moments only. But nowadays all the ingredients are available in the market very easily.So why not in home ?Yes , I usually make  it at home now.And Now the recipe for you also.
Prepare it in a Badsahi Style... You will feel it.




Ingredients 

Vegetables Requirements
  1. 1 and 1/2 cups Basmati rice.
  2. 2 carrots (finely chopped and)
  3. Beans 5-6 sticks (cut into small size)
  4. 1 cup Green peas (boiled)
  5. 2 green chilies (chopped)
  6. 1 tsp ginger paste.
 Roast All Dry Spices and Grind in Fine Powder
  1. 1 tbsp Sahi Jeera 1tsp
  2. White Pepper 1tsp(shahi marich)
  3. Black Pepper 1tsp
  4. 1 Bay leaf
  5. Jaiphal 
Other Main Ingredients 
  1. Jafran soaked in 2 tbsp Milk.
  2. Whole Garam Masala (2 inch Cinnmon stick, 2 green cardamom, 4 cloves)
  3. 2 tbsp oil.
  4. Ghee 2tbsp
  5. Salt to taste.
  6. Sugar to taste
  7. Dry fruits : Cashew - 10-12, Almonds - 4-5(cut into slice),Pista- 10-12,Raisin-10-12. Roast In Butter and Keep aside .
*** Soak basmati rice in water for 1 hour.
****Roast and Grind White Pepper,Back Pepper, Jaiphal.


Method :

  1. Heat oil in a pan.
  2. Add jeera and whole garam masala to it,when jeera starts to splutter.
  3. Add all vegetables like carrots,beans,green chillies to it and saute for some times.
  4. Add ginger to it.
  5. Add soaked Rice and 2and half cup of water cover and cook  for some times.
  6. Add all dry fruits to it.
  7. Add salt and sugar to taste.
  8. Add green peas.
  9. Cover and cook till the rice is done.
  10. Sprinkle grinded Masala and Mix it properly.
  11. Add Soaked Jafran and Mix.
  12. Add Ghee and mix .
  13. Serve hot.
