As the weekend approached, I found myself craving something comforting, flavorful, and satisfying. Something that would transport me to the bustling streets of India, where the aroma of spices and grilled meats filled the air. And that's when I remembered my favorite Roasted Chicken Tikka recipe!

This recipe is for anyone who loves Indian cuisine. The combination of yogurt, spices, and lemon juice creates a marinade that's both tangy and creamy, while the roasted chicken is infused with a smoky flavor that's simply irresistible.

To start, I began by preparing the marinade. In a large bowl, I whisked together yogurt, lemon juice, garam masala, cumin powder, coriander powder, cayenne pepper, salt, and black pepper. The aroma of the spices was intoxicating, and I couldn't wait to see how the chicken would turn out.

Next, I added the chicken to the marinade, making sure that each piece was coated evenly. I covered the bowl with plastic wrap and refrigerated it for at least 30 minutes, allowing the chicken to absorb all the flavors.

While the chicken was marinating, I preheated my oven to 400°F (200°C). I lined a baking sheet with aluminum foil and sprayed it with cooking spray, making sure that the chicken wouldn't stick to the sheet.

Once the chicken was ready, I removed it from the marinade, letting any excess liquid drip off. I placed the chicken on the prepared baking sheet and roasted it in the oven for about 25-30 minutes, or until it was cooked through and slightly charred.

Ingredients:


- 1 1/2 pounds boneless, skinless chicken breast or thighs

- 1/2 cup plain yogurt

- 2 tablespoons lemon juice

- 2 teaspoons garam masala

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

Instructions:
