Beguni | Batter Fried Brinjal | Bengali Recipe

Friends , in Bangalore weather is getting cool . Sometimes rains are falling and night becomes relaxed and me too enjoying a sound sleep . Really I am feeling blessed when I can sleep properly ! And a rainy season means , evening treat with a cup of hot tea. A full fledged adda (gossip) with friends and some yummy snacks like home made jhal moori (try- masala moori ) along with fried snacks like Beguni, Aalur chop , Fuluri , Pyaji etc. These all are actually Kolkata snacks , in every gully (narrow lane) , you will get these in small shop. They are frying continuously and its getting sold out like hot cake . So friends I want share one of this fried item called beguni in Kolkata.

 Beguni - Esho Bosho Aahare
This beguni actually famous with some rice items also like fried rice(Indian), pulao etc. To prepare this easy recipe , you need seed less brinjal means that brinjal only which has very rare seeds in it. 
I am sharing a trick to buy more seed less brinjal- Whenever you are going to buy brinjal, feel to have more light than others by your hand. More light in weight means , there is a chance to become seed less . So now check out this recipe.

Ingredients :

6 Brinjal slices (long thin slices) marinate with little salts.

Batter Ingredients :

1/2 cup Besan / Gram flour
2 tbsp Maida / Flour 
1/2 tsp onion seeds
2/4 tsp Red chili powder
1/2 tsp Turmeric powder
2/4 tsp Cumin powder
1 tsp Poppy seeds
2 pinch asafoetida
2 pinch sodium bi carbonate
salt to taste

Refined Oil for deep fry

How to Cook :
  1. Mix all batter ingredients with little water to make slight thick batter.
  2. Heat oil in a pan.
  3. Apply batter in each brinjal slice and fry until it turns into brownish in color.
  4. Keep aside .
  5. Serve immediately as snack and along with Pulao or Fried rice also.
