Egg Biriyani With Vegetables

One of mY favourite item is the Biriyani.Whatever it is like Chicken Biriyani,Mutton Biriyani,Egg Biriyani or Veg Biriyani.There is no confusion about the Biriyani.I like evry kind of Biriyani.My Hubby Too...But if you are talking about the Biriyani , then I will pause you to describe you any other states so called Biriyani...Its only the Best one In Calcutta,neither elsewhere...I do not agree with you at all...Amenia Biriyani...yumm...just getting the flavour from here too...Pls if you once go to Calcutta,taste it once,and I know you will remember it for the Lifetime.Hey! look I was into dream,I just forgot about my recipe.Ok,Today I will share with you the Egg Biriyani.Its just like Mutton Or Chicken Biriyani...But instead of mutton or chicken here I use Boiled Eggs.And I often do this one as this very less time consuming than other one... In this Biriyani Recipe I have used few Pudina & Coriander leaves to bring some Variants . You can avoid too ..... and Meetha Ator , I have used the kolkata flavoured one !!

Ingredients :

Roast & Grind All dry Ingredients 

Cinnamon 4 sticks.
Cardamom 4.
Cloves 4.
Jaiphal Powder 1 tsp.
Jaitri Powder 1 tsp.
Jeera Powder
Bay Leaves 2.
Pepper Seeds 1tsp

Whole Spices :
Basmati Rice 2 cups(soak for 1 hr.)
Cinnamon Stick 2/3
Cardamom 2 crushed
Cloves/longs 4/5
Bay Leaves 2 
Pepper Seeds 1/2 tsp

Soak In A Bowl & Keep Aside 

Rose water 1 tbsp.
Kewora Water 1 tbsp
Saffron 1/2 gm.
Milk 1/2 cup
Meetha Ator 2 drops (Kolkata Flavoured)

For Frying 
Ghee 2 tbsp
Butter 2 tbsp
White Oil 6 tbsp.

For Gravy Spices

Onion paste 4 tbsp.
Garlic Paste 1 tbsp.
Green Chilli Paste 1 tbsp.
Ginger Paste 2 tbsp
Turmeric Powder 1/2 tsp.
Salt to taste.

Boiled Eggs 2.
Pudina Leaves Few Chopped
Coriander Leaves Few Chopped

Few Chopped Vegetables 

Carrots 
Beans 
Green Peas
Cauliflower Florets cut into small sizes 








Method :

After 1 hr. soaking,boil rice with 1 tbsp oil,salt and bay leaves,Whole Spices.
Whenever rice is half-done , Strain water &spread it out with little oil again.
Sprinkle soaked mixture over the rice.
Put oil in a Kadai,add little Oil, Ghee & Butter .
Fry all vegetable and 
Add all the pastes like Onion,Garlic,Green chilli and Ginger and cook until oil comes out.
Add little and Turmeric Powder too..
Add Boiled Eggs.
Brush Ghee & Butter inside the Handi, Place 2 spoons of rice into it, spread the mixture of vegetables spices gravy over it,Sprinkle Saffron soaked mixture.
Sprinkle Roasted Powder on it . Sprinkle Few Chopped leaves of Pudina & Coriander .
Now spread remaining Rice over it and follow up the same steps.
Now place a lid over it.
Place a vessel filled up with water , steam for 20 minutes, Then place Handi on the vessel (Handi Bottom should not touch the water level though)& cook in a low flame for 30 minutes .
After half an hour your Biriyani rice ready to serve.
Shake before serving.
Your Yummy Egg Biriyani is completely ready to serve.
Serve with Cold Raita & Salads .
Look How smell it !!!

Biriyani looking so yummy. It would be of much help if you can guide me on how to prepare it in a microwave. Is there any chance of the rice getting stuck to the bottom of the vessel while cooking on gas oven?
