Hi friends today sharing Hyderabad Veg Dum Biriyani Recipe for SNC family. SNC means South V/S North Challenge which is a superb idea Of Divya Pramil a Fantastic Editor and Photographer of Foodie Blog world. Every month one challenge is held for both of the team like South team member will serve one recipe for North team members and North team members will try and post this and in case of North team it is same or vice versa. Nice na? So as per challenge rule this month challenge host is Swasthi for North Team .Swasthi gave a challenge of making  Hyderabad Veg Dum Biriyani Recipe. Though it is my choice recipe I took the challenge and I am successful too. Thanks Swasthi and Divya for this nice recipe. On the other hand in favor of South team Kirti has given the challenge  to make Chana Dal Halwa.  This is also a nice challenge. I want to try this one too for someday.Thanks to Kirti also.

As per challenge today I am posting Hyderabad Veg Dum Biriyani Recipe. Taste is just awesome. I am loving it. lets check out the recipe. But friends one disclaimer that I used only my easy and quick method to prepare this biriyani. Otherwise all the ingredients are same as mention Swasthi in her site:





Hyderabad Veg Dum Biriyani | SNC Post


Ingredients
  • 1 tbsp Ginger & Garlic paste
  • 1 tsp Homemade Biriyani Masala
  • 1/2 tsp Red Chili Powder
  • 1/8 tsp Turmeric
  • 250 ml Yogurt
  • 4 tbsp Ghee/Oil
  • Few Saffron Strands
  • 30 ml Hot milk to soak saffron
Nuts
  • Almonds as per your choice
  • Raisins & Cashew
Brown Onion
  • 1 medium Fried Onion
Veggies 
  • 8 medium size Cauliflower Florets
  • 1 Large Boiled Potato Cubes
  • 1 Large Carrots Chopped
  • 1 Cup Green Peas
  • 1 and 1/2 tbsp Mint Leaves finely Chopped
  • 2 tbsp Coriander leaves finely chopped
  • 2 Green Chili Slit
Dry Spices 
  • 2 inch Cinnamon Sticks
  • 4 Green Cardamoms
  • 1 Black
  • 2 Big strands of mace
  • 2 Star Annise
  • 6 Cloves
  • 1 Bay leaf
  • 1/2 tsp Sahi Jeera (Black Cumin)
For Rice
  • 2 Cups Basmati rice
  • 1 tsp Oil
  • 1/4 th tsp Sahi Jeera (Black Cumin)
  • Salt to taste
  • 1 tbsp Chooped Mint and Coriander leaves(last to add)


Cooking Directions

To Cook Rice :
  1. Soak Basmati rice for half an hour.
  2. Add cumin seeds,salt,oil and cook until 70% done. (cook in a handi)
  3. Once done open the lid.
To fry Onion
  1. Heat oil in a pan.
  2. Add sliced onion sprinkle with little flours and fry until color turns to brown.
  3. Keep it aside.
To CookVeggies
  1. Now put one fry pan and heat oil and ghee together.
  2. Add cumin seeds,bay leaf, dry spices (little grounded),ginger-garlic paste and vegetables gradually. Mix well and fry.
  3. Add Green chili,yogurt,mint leaves and coriander leaves and mix well.
  4. Add nuts and raisins and fried onion and salt to taste.
To Ready For  Dum
  1. Now add this ready veggies directly to cooked rice mix evenly.
  2. Sprinkle homemade biriyani powders and mix gently.
  3. Sprinkle soaked saffron milk and Mix well.
  4. Again spread chopped mint and coriander leaves and cover it.
For Dum:
  1. Put one tawa on to gas .
  2. Keep it into simmer.
  3. Put Biriyani handi with sealed cover or lid.
  4. Cook 30-40 mins or until one heavy steam is coming out on your face when you opening the lid. (that is the procedure to check whether the dum is perfect or not)
