Masala Moori an yummy street food of India. But name and taste wise it differs from state to state . Some people co-related Masala Moori with Bhelpoori too. But its different from Masala Moori...In Bhel poori some special chutney or sauces are using, and its little sweet and sour combination too. But in Masala Moori various spices are using more, its a kind of something Hot and Spicy combination.

In Kolkata Its saying like Jhal Moori. Jhal means something which is hot and Moori is Puffed rice only. I am sharing kolkata style Masala Moori. I am sure about it that you will like it definitely. Rather I am liking Masala Moori or Jhal Moori whatever you say than Bhel Poori. It is really a tasty treat for evening snacks in every house of kolkata too... I usually make it like kolkata style... Summer is on the way. A season of  Hot and Sticky weather. Season  for drinking lots of liquids. So in this season I basically prefer to take more waters, juices,cold shakes of various kind... It is really very necessary to all the people to maintain themselves physically fit as well as to take protections when going outside. As hit will take out all the humidity from the body and as a result man will become tired and exhausted . And lack of water brings disaster in people's life like dehydration ..Which is very dangerous disease I think so. So stay cool in the summer season by drinking lots of healthy juices and water.

To think of it yesterday I prepare one milk shake with litchi crush... it was really a tasty and healthy drink I ever made. My family liked very much. Basically I am not a fruity person . In fruits I like only some countable fruits. Litchi is in my list. I love Litchi.So I prepare this healthy cool drinks... Hope you will enjoy too...

Baking a home made Baking a homemade bread, cake or cookies will give the best outcome. However in order to achieve the best results, a perfect recipe and right techniques are required.

We are a small group of home baker friends, who love and want to learn more about the nook and corners of baking.  We are planning to try out recipes from books/magazines and cooking shows.  Every member gets a chance to present their choice of recipe and share important points with the rest of the group.
Main purpose of this group is to learn the techniques, critic the procedure if there are ways to improve, and to eat a delicious food.


Malabar Chicken curry.A famous Dish from South India. As per my knowledge Malabar coast is a beautiful place for holidays. As it is a district of Kerala I believe on these words that It is really a Lovely Place in India. In future i want to go there definitely to cherish its scenic beauty..Though i have a very little knowledge about Malabar it will be better If you suggest somethings about Malabar foods...

As i live in chennai i tried few Malabar dishes in some restaurant. I  like Malabar Chicken Biriyani...a preparation of pure ghee with samba rice and  little spicy at all (I feel). A digestive preparation. And about Malabar Chicken Curry its really a spicy and rich chicken curry i made ever. I found this recipe from a TV show. And I must say about the truth that the recipe also belongs to one of the special south indian restaurant in Kolkata. The name of the Restaurant is Tamarind(opposite to Deshapriyo Park). A chef from Tamarind restaurant shared the recipe of Malabar Chicken Curry.I tried exactly how he explained, and trust it was just superb. My family just enjoyed it heavenly. Only thing I changed I prepared with bone chicken pcs. But actually the preparation will be in boneless chicken. So friends if you try this chicken curry try boneless chicken to get the authenticity. Today sharing a Traditional Bengali dish which was very famous in Tagore Family. Hope you understood what do I mean to say about Tagore Family ! Tagore Family means the leading Family of Kolkata before 300 years of history. Rabindra Nath Tagore who born in this family. As this family was a Royal in culture and   literature. At the same time they were very broad minded about the world resources like world Culture, World Literature and in case of World Food of course. Yes they were really a fond of authentic cuisines. But for them still  they had lots of dishes or foods which are carrying the impressions and signature of Royal Tagore Family.

So today sharing a Lovely Authentic and Traditional Recipe from the book of "Thakur Barir Ranna" name Dahi Aaloo. I know very well that you will love it definitely. Its really a quick and easy recipe but really tasty one. It goes very nicely with Plain rice or Chapathi / Roti. To prepare it you need very few ingredients at all. Friends after a long time I am posting One Chinese recipe. Chinese Dish is one of My family choice at all. Usually in our locality there is a Chinese restaurant name Cascade. Its our favorite one restaurant also. An authentic Chinese flavor you can get in this restaurant too. And they are providing a good service to there customers also. A lovely restaurant with lovely decoration too. I love this one. And about there Chinese foods I must say just awesome.
This is also good news about any Chinese food is that Chinese Foods are really a healthy foods.In any kind of Chinese dishes some ingredients are very common and these are Soy sauce,Vinegar,Garlic,Tomato or Chili sauce,Spring Onions,sometimes ginger etc etc. Today sharing one burnt garlic flavor Chinese Fried rice. Today sharing Dal Makhani a famous North Indian delicacy. A popular dal recipe which is originated from Punjab. For an authentic recipe of Dal Makhani two types of Dal are using such as whole black lentils and Red kidney beans. A fabulous creamy buttery gravy of  lentils which goes very well with any kind of Naan or Paratha or Rice. It is such one recipe which is must one treat for any north Indian occasion or ceremony.

This recipe is something special for me.Whenever I went to any north Indian restaurant.I always prefer to taste this Dal. It differs and a time consuming dal recipe. Still I always favor that one which has little smoky flavor in it.As per my knowledge this charcoal flavor gives a really Punjabi Tandoor taste which is the signature of any authentic Punjabi Dish.

As I do not have any tandoor at all so to bring this smoky charcoal flavor I used little trick. That is nothing what I explained in my Smoky Chicken Bharta Recipe. Pasta a famous dish in all over the World.It is basically a traditional Italian delicacy. Nowadays we the Indian are very fond of some Italian cuisines like Pizza,Pasta ,Risotto and Lasanga. Though it varies from original taste to Indian version, still we are just loving it. Pasta is a kind of Italian Noodles which can be prepared with variety sauces and herbs. For very rare dishes we are adding some veggies with this dish too. It depends.
There are so many variety of pastas are available in the market. It has different different names and shapes too. Like Macaroni, Spaghetti, Fettucine, Large Shell etc etc.I do not go with that variety basically, whatever I want to make I buy.No choices at all.
So Dear today sharing a common Pasta dish name Pasta in white sauce. We like it very much.Its very easy to prepare also. Usually I prepare it in Pressure Cooker.So it takes very little time to prepare.And of course I serve it as a Breakfast item. Butter Chicken Masala. A delightful famous Chicken recipe. From couple of months I was thinking to post this recipe. But somehow it would not work! So this evening I got the chance to share the recipe of Butter chicken masala. This recipe I learned from one Bengali cookery show. But I made some changes on it. In case of garam masala I prepared it at home that has little different flavors which increase the taste of Chicken butter masala. Trust me it is exclusively Restaurant style Chicken Butter Masala. After preparing in this way you will say the same. So I claim it is an Authentic food spicy and lovely recipe. With tandoori roti and butter naan it goes marvelous. But you should use the all the spices which I mentioned here...and for some ingredients I mentioned to use only Everest spices no other brands please.. Friends this time I want to try some thing special for this weekend. Weekend really a leisure time for all of Us. Is not it.? In my case I am really exhausted after a weekdays... so feeling no cooking at all. So prefer to eat outside. Eating out with some special dishes or new dishes. For restaurant eating I mostly prefer North Indian, South Indian, Mughlai treat and Italian or Mexican or Chinese Foods. In some Mexican Foods I tried Quesadillas Pizza or Mexican Pizza. It is really a tasty one... So as I got interested with this recipe so one of my favorite TV show I got this recipe. And for this result today I am going to share with you too. Hope you will like it.
Its easy one to try at home. Sharing one Basic quesadilla only... try first this one.

On that TV show they tried with chicken and rajma as the filling of quesadillas. But I didnot have any minced chicken or rajma. That is why I tried with only the basic vegetables. Still it was awesome. And from that Tv show I came to know that Mexicans are very familiar with  Cumin seeds/powder. It was really a surprising for me. Well, and Thank god for that it is available easily in our Indian market too. And most of our preparation we are using it also. Right! Anyway another thing for the pizza base they are saying Tortilla which is nothing but our Indian Flat bread/chapati. So why late all ingredients are ready at your pantry so try this out right now and give a surprise to your family with Mexican Pizza.

As there is one confusion arises about quesadillas tortilla so I want to point out these source too... I agree with all of them who are saying tortilla is prepared with Cornflour only. This is the authentic way.So sharing From WIKI ...

 "Most quesadillas are prepared by just folding and filling a tortilla, but other variations have tortillas specially made for filling. The type of tortilla varies by region. In most of Mexico, Central and South America, corn tortillas are traditionally preferred. In northern regions of Mexico, along the United States border and across the USA, quesadillas are most commonly prepared with flour tortillas.[5] Another variation is deep fried; its preparation resembles more of a pastry than a tortilla. Quesadillas from the San Luis Potosí region are not quesadillas in the traditional sense, but rather are enchiladas potosinas. Red or occasionally green salsa is added to the flour, which makes the tortilla red or green. In making these enchiladas, cheese is added, and the tortilla is then folded in half and fried."
"Other variations include the use of wheat flour tortillas instead, especially in northeastern Mexico. Wheat dough is most commonly used in place of corn masa. In this case, the flour tortilla is prepared, folded and filled with cheese, exactly as the corn.[9]"
In Tarla Dalal to make flour tortilla they are using Maida also...I used that one too,rather they are using more maida flour than whole wheat flour.

Friends it is really a long break that I am posting another dessert recipe. This time sharing something different for you. A dessert which is very famous in Muslim community like India,Bangladesh,Pakistan,Iran or Afghanistan. This is the recipe which they all are ready to serve for their Wedding ceremony and on Various festivals like Eid-Ul-Fitr and Eid-Ul-Adha . A typical formula to make kheer with little variant.Tradition wise Firni is served chilled in Earthenware or Clay pots. But Dears I am really fan of this Firni rather than our Payesh or Kheer. And I have no doubt that you will love too.

I got this recipe from my Sister. Her Mother-in-Law is just used to prepare it as she belongs to Muslim Family. So in that case It is very true that it is an authentic Firni or Phirni Recipe. Some people add little green cardamom,pista and many more nuts and essence to make it more rich. But in my sister's in-laws house, they prepare it with just a few ingredients instead they are using nice quality scented rice means a specific rice called Gulab rice one kind of Basmati Rice , which is little scented like Rose. But option is there you can use Flavored Basmati Rice or Samba Rice (Govind Bhog rice) too. Then you can add little Rose water or Dried rose petals or Rose essence whatever you want. It is your Choice! Me too using Good quality Flavored Basmati Rice.
