Jodhpuri Pulao | Rajasthani Pulao

Did you ever go Rajasthan? For me the answer is No. But Trust me I am very eager to go there. Just waiting for my Son's growing up. As there is so many places like Palace,Killa and many more which are very exciting for kids too.  So Hope after 2 years we are going to Visit Rajasthan. And hope you all know that Rajasthan has a really Rich culture in there foods. There spices and ingredients are really giving something different,which I like mostly. In my Childhood I had so many Rajasthani peoples as neighbors. From them I came to know the perfect taste of Rajasthani Cuisines.So one Marwari Dish I got from my aunt who itself is a Marwari. So Today sharing a purely Vegetable Pulao. Jodhpuri Pulao enriched with the flavor of Rajasthan,Dried fruits and Fresh Vegetables. Little sweet in taste . A perfect party choice for Vegetarian. With lots of nuts,dates and raisins make it perfectly Rich and Royal in Taste. No way to avoid it. In my family all members are Fan of this Pulao. Hope you will also like this...





Ingredients :

2 Cups Basmati rice,washed and soaked.
7-8 tbsp Ghee.
5-6 dried Dates,chopped
12-15 Cashew nuts, halved.
10 Almonds,sliced.
1 tbsp Raisins.
1 and 1/2  tsp Cumin seeds.
1 tsp Fennel seeds.
1 tbsp Garlic Paste.
1 tbsp Ginger Paste.
3/4th Cup yogurt.
1 tsp Garam masala powder (Cinnamon stick,Green Cardamom, Cloves dry roasted then powder)
1/2 cup Green peas.
Carrots small pcs. (optional but more vegetables of your choice you can add)(halved boiled)
15 black peppercorns crushed.
Coriander leaves Chopped.

Method :

Heat 6 tbsp Ghee in Fry pan, add cumin seeds,fennel seeds and saute.
Add dried dates,cashew nuts,almonds and saute for sometimes.
Add all vegetables and cook for sometimes.
Add ginger paste,garlic paste and salt to taste.
Add rice and yogurt and mix well.
Add 4 Cups water.comes to boil,Add garam masala powder mix well.Cover with lid and cook in low flame.
When rice is almost done put off gas and sprinkle peppercorns and rest of the ghee and coriander leaves.
Serve warm with any Curry in your choice.

if u go to rajasthan make sure u plan for mt abu too

i loved the food there and since it was very cold around 5 degrees in month of november food became even excellent
