Carrot Barfi | Carrot Sweets

Yesterday, I had prepared one Sweet item. Its extremely mouthwatering, tempting for any Home party. In my House its always happens. That means surprising guests are always coming. But I am Happy to Welcome them. So may be all the time you were not ready to make something for them. But nothing will be mess up if most of the ingredients are available in your kitchen. In my quick recipe list Quick Fried rice, Quick chicken curry or Quick Paneer recipe and one Salads are always special. But in case of Sweets or desserts you have to be patience because to make any sweets dish you have to think about the time also. Within short period you have to prepare it with all the available sweets ingredients otherwise it cannot be possible. That's the reason this Carrot Barfi is very regular and ready sweets for quick service.Its quite easy and quicker recipe to make some worthy sweets for my Guests. So choice is up to you. Ingredients :

Carrots 6 big sizes - Grated then grind it into mixer with little water.
Milk 2 cups or Milkmaid 1 cup.
Mawa or Khova 1 cup.
Ghee 4 tbsp.
Green Cardamoms 2 - 3 crushed.
Almonds cut into thin slice.
Pista cut into small Pcs.
Raisins a few.
Cashew crushed 10-12.
Sugar 1 cup.(if you using Milkmaid then sugar to taste)


Method :

Heat 3 tbsp Ghee in a pan.
Add crushed green cardamoms.
Add Carrot paste.
Saute for 5 to 6 mins.
Add milk/milkmaid, mix well.
Add sugar to taste.
Add Mawa/Khova.
And Mix well, saute for sometimes,milk should be soaked.
Add almonds,cashews,raisins,pista gradually.
Mix finely.
It will be like a dough.
When it is done sprinkle little rest of the ghee onto.
Apply ghee on the tray.spread carrots mixture with even level.
Cut into desired pcs.
Garnish with almonds and raisins.
Serve when Barfi gets cool.
