Smoky Eggplant Bharta | Smoky Brinjal Masala

Dear all, Today I am going to Share with you Eggplant Masala better to call it Bengan Bharta .This is some kind of easiest Subji which I made usually. But I must say you that its so tasty that once you made then you will have to make it very often.

In Bengali Eggplant is called "BEGUN".If you split, it is like BE-GUN which means "No Value" or "NO Quality" at all.In simple words eggplants have no Nutrition value. I am not sure about this too.Because Nowadays Nutritionist are saying that Eggplant has full of Anti-oxident Properties which help you to protect from the Cell Damage. So May be This is actually a Myth That Eggplant has no Nutrition Value. But obviously Nutrition value will depends on that how You are cooking this one!!! If you cook it spicy then it has less value otherwise its good for your heath.

But its true we like to cook and eat.So somedays it will be spicy and some days its healthy. So what matters? Cook and Eat as you wish :) There are so many recipes we have to make with eggplant in Bengal.I will share with you definitely once. But this is just a bharta of Bengan .Little spicy also.Usually I made it with Mustard oil.And You know, any spicy menus like non-veg items goes to extreme fit with the Mustard oil.Anyways this Bengan Bharta is so simple but goes very well with warm Rice as well as Roti also.

Awadhi Paneer Masala | Lucknow Paneer Masala

Whenever I am thinking for some special cuisine at my home, it has to be really a special dish for me. No any common dishes I would not prefer to follow absolutely. So Some state or region has its own culture for their cuisines. So we identify them only by their special and identical cooking preparation which are really well known by all of us.As for example For Mughlai khana we always know that Biriyani is the most favorable delicacy. Same to same Awadhi cuisine or Lucknow cuisine has their own specialty too. In maximum cases they are cooking in Dum Puckt style foods means cooking will be done in a big hundi with a lid including all the spices but in low flame. But think as Mughal culture and Lucknow culture are more or less same in their cooking style. Still it has to be some differentiation in some cases. Hope you got to know that why I had given so many lectures about the Awadhi Cooking. Because today I want share one Awadhi special recipe. It's a simple and easy cooking reci

In Tradition this meal is called Thali . Here thali represents a round platter with small bowls of food items. In M ughal period G ourmet T hali was like that.
