Dahi Vada

Dahi vada a south indian special dish,which I love very much.Whenever I went for travelling at Andhra Pradesh,
I tasted it...but must say at there dahi vada is not like that type which one we do regularly at home!!! it was very simple to taste.
There was no masala/spices at all..vada was served only with curd and salt.After that I heard that There is two types of flavours.
One is Like South Indian style another one is Rajasthani style/Gujrati style.Rajasthani style/Gujrati style dahi vada is very spicy/masala flavoured with lal mirchi/red chili.
I like this one... Hope everybody like this too...The deep fried vadas are served with curd,tamarind chutneys and masala.


Ingredients :

For Vada :

Urad Dal/lentils 2 cups(soked in water for overnight)
Ginger paste 3-4 tsp
Green chili paste 3-4tsp
Oil to deep fry

For Chutney :

Tamarind Juice (soak in warm water)
Sugar 1 cup

For Garnishisng :

Coriander leaves chopped 1 cup
Red chili powder 3tsp
black salt powder 2-3tsp
Cumin powder (roasted)
Sev 2tbsp

Method :

Grind Urad dal in a mixture.
Add Ginger and green chili paste to it.
Keep aside for 2-3 hrs. for Farming.
Heat oil in a pan.
Deep fry vadas in oil.
Drain excess oil.
Put vadas in cool salty water for some times to soft.

For Tamarind chutneys :

Put tamarind sauce in a pan.
Put it on the the gas.
Add sugar to it and boil until its being like syrup.
Keep for cooling.

For serving :

Beat curd very well.
Roast cumin seeds in heat.
Grind in a mixture.
Mix Black salt,red chili powder and Roasted cumin powder very well.

Serve :

Serve vadas in a plate.
Pour 2tbsp curd over it.
Pour little tamarind sauce/chutney.
Sprincle Masala/spice over it.
Sprinkle Coriander leaves and sev.
serve with smiley face.
