Rajasthani Thali



Rajasthan is the taste of place where a variety of vegetarian recipes blows in the air...

I can smell it...A delicious taste of masala and vegetables...I love to travel this place also.As their culture they are rich with there taste also...
So,it is a little effort from me that I want to share a Rajasthani Thali with you...
Try this out and let me know...

Menu :

Bedmi Puri (Indian Bread)
Gatte Ki sabzi (Gram Flour \Curry)
Lasun Ki chutney (Garlic Pickle)
Rajasthani Vindi (Rajasthani Lady fingers)
Daal Batti (Lentils with Snacks)
Rajasthani Pulao(Sweet dish)
Raita (Curd Rasam)

Bedmi Puri :

Ingredients :

  1. 500 gm Moida
  2. 100 gm Moong daal
  3. 1 tbsp Red chilli powder
  4. 1 tbsp ground coriender
  5. 1 tbsp garam masala (sahi)
  6. 4 tbsp oil for dough
  7. Oil to deep fry
  8. Salt to taste
* Soak moong daal over night/a full day

Method :

  1. Mix moong daal,red chilli powder,ground coriender,garam masala & Grind it.
  2. Make a paste of grinded mixture.
  3. Add oil and paste in moida.
  4. Add water and make dough out of it.
  5. Make small balls out of the dough and roll out it to make puris.
  6. Deep fry it till the blow up.
Bedmi puri is ready to serve.

Gatte Ki Sabzi :

Ingredients :

  1. 400 gm besan
  2. 2 tsp coriender powder
  3. 4 tsp ghee
  4. 300 gm curd
  5. 1 tsp red chilli powder
  6. 1 pinch haldi
  7. 1 tsp cumin seeds
  8. 4 tsp oil(badam/white)
  9. salt to taste
Method :
  1. Add red chilli powder,salt,coriender powder and ghee to besan.
  2. Mix it well.
  3. Prepare stiff dough.
  4. Make thin strips of the dough.
  5. Boil them in water till they are floating.
  6. Now cut them into pcs.
  7. Add red chilli powder,salt,coriender powder and haldi to the strained curd.
  8. Mix it well.
  9. Heat the oil.
  10. Put cumin seeds and curd mixture.
  11. Cook till it comes to boil.
  12. Now add cooked besan pcs.
  13. Cook it medium flame for 5 mins.
Gatte ki sabzi is ready to serve.

Lasun Ki Chatni :

Ingredients :

  1. 15 cloves of garlic.
  2. Dried coconut (Grated) 1/2 cup.
  3. 3-4 red chillies,broken into 4-5 pcs.
  4. 1 tbsp seesame seeds/till/peanuts.
  5. ball of tamarind ,the size of walnut
Method :

Roast all these ingredients in a kadai one by one to ensure even browning.Put in a blender and process for a short while till it makes a coarse paste.

Lasun ki chatni is ready to serve.

Rajasthani Vindi :

Ingredients :

  1. 250 gm ladyfingers.
  2. 3 tbsp bengal gram flour
  3. 1/2tsp onion seeds(kalo jeera)
  4. 1/2 tsp red chilli powder
  5. 1 tsp cumin powder
  6. 1 tsp coriender powder
  7. 1-1/2 fennel seeds
  8. 1 tsp dry mango powder
  9. 4 green chillies
  10. 1/2 tsp turmeric powder
  11. 1/4 tsp cumin seeds
  12. 1 tsp garam masala powder
  13. Salt to taste
Method :
  1. Rinse and wipe ladyfingers.
  2. Snip off the 2 sides and cut on one side.
  3. Combine bengal gram flour,1 tsp fennel seeds and all other dry masala except cumin and onion seeds in a bowl and mix well.
  4. Add salt and 1 tsp oil to it.
  5. Fill this masala into the ladyfingers and set aside.
  6. Heat up 3tbsp oil and fry rest of the fennel seeds,cumin seeds,green chillies and onion seeds for a while.
  7. Add stuffed ladyfingers to it and stir fry for 5 mins.
  8. Cover and Uncover to stir and fry till they are not crunched.
Rajasthani vindi is ready to serve.

Daal Batti :

Ingredients :

For batti :
  1. 1 1/2 cups whole wheat flour
  2. 1/2 cup besan
  3. 1/2 cup curd
  4. 3tdsp ghee
  5. Salt to taste
For daal :
  1. 2-3 cups split green moong dal
  2. 1/2 cup chana/tur dal
  3. Dry red chillies 2-3
  4. Garlic 2 cloves (chopped)
  5. 1tsp cumin seeds
  6. 1 tsp mustard seeds
  7. 10-12 curry leaves
  8. 1 tbsp coriender powder
  9. 1 tbsp red chilli powder
  10. 1 pinch hing
  11. 2 tbsp ghee/butter
  12. 2 cups water
  13. 2 tbsp lemon extract
Method :

For Batti :
  1. Mix all the ingredients of batti and enough water to make a dough.
  2. Divide into 6 equal size,roll it like all same size balls ,cover it and keep for 1 hrs.
  3. Bake in the oven at 350* F for 30-35 mins till it becomes golden puffed and spongy outside.
  4. Glaze with ghee.
For Daal :
  1. Soak daal into water for 1-2 hrs.Pressure cook the daal and make a paste with it.
  2. Heat Ghee in a pan,add mustard seeds,jeera seeds when it starts to crackle, add curry leaves, 1 pinch hing ,dry red chilli,and chopped garlic.cook for some times.
  3. Add red chilli powder,turmeric powder,coriander powder and cook till oil is not separated.
  4. Add salt to taste,daal and littile more oil.Bring to boil.
  5. Add lemon juice and coriender leaves to garnish.
Serve Daal Batti together Hot.


Rajasthani Pulao :

Ingredients :
  1. 2 cups Basmati rice
  2. 1 cup sugar
  3. 1 cup ghee
  4. 20 almonds,blunched and chopped
  5. 20mOista chopped
  6. 1 tsp cardamom powder (elaaichi powder)
  7. 1/2 tsp saffron soaked in 1 tsp milk
  8. 4 cups milk
Method :

  1. soak rice in water for 2hrs.
  2. Heat ghee and add the drained rice,add milk to it.
  3. Cover and cook on a low flame ,stirring ocassionally but gently,so that the rice grains do not break.
  4. As soonas the rice is cooked,add cardamom powder,dry fruits,sugar and saffron.
  5. Mix well.
  6. Bake in a moderately hot oven,till each grain is seperated.
  7. Serve hot as sweet dish.
Raita :
Ingredients :
  1. Curd 2 cups
  2. Cucumber (Chopped) 1 small size
  3. Onions(chopped) 1 medium size
  4. Green Chilli 3-4 (finely chopped)
  5. Tomatoes 1(chopped)
  6. Roasted cumin powder 1tsp
  7. Black pepper powder 1tsp
  8. Red chilli powder 1 tsp
  9. salt to taste
  10. Coriender leaves (Finely chopped)
  11. Water 4 cups
Method :
  • Mix all the ingredients one by one in a bowl.Mix well and keep freez.
Serve chill.

Now You can flavour the taste of Rajasthani Thali.
